Kale and grapefruit salad with chicken

Hearty and refreshing at the same time, this has been my favorite salad for months.  The key to making this salad tasty lies in having the right grapefruit.  A good grapefruit should be sweet and delicious with only the tiniest, slightest hint of bitterness. Here is what you need:

  • a good grapefruit, chunked, first peeled and sectioned so you just have the meat without any skin or membrane 
  • 5 or so leaves Lagunitas kale, vein cut out and chopped
  • 4 or so leaves butter lettuce, torn in medium-small pieces
  • an avocado cut in chunks
  • about 1/4 lb cooked chicken, shredded
  • a heaping tablespoon grated parmesan
  • for the dressing: the juice of half a Myer's lemon, liberal olive oil, salt and pepper to taste

Toss it all up and voila!
